Instructions
- Cook the Pork: Heat the olive oil in a large nonstick skillet over medium-high heat. Add the ground pork and cook, stirring often, until only a few pink pieces remain, about 4 minutes.
- Add Vegetables and Seasoning: Add the cole slaw mix, green onions, garlic, and grated ginger to the skillet. Cook, stirring often, until the cabbage becomes tender, about 2 minutes. Stir in the soy sauce and sesame oil to combine.
- Prepare Egg Roll Wrappers: Lay out one egg roll wrapper at a time in a diamond shape on your work surface. Lightly dab the top corner of the wrapper with water to help seal the edges later.
- Fill and Roll the Egg Rolls: Spoon 3 to 4 tablespoons of the pork mixture in the center of the wrapper. Fold the bottom corner of the wrapper up over the filling, then fold in both side corners. Roll the entire wrapper up towards the top corner and gently press to seal.
- Prepare for Air Frying: Place the prepared egg rolls in the air fryer basket in a single layer. Lightly spray or brush them with cooking spray or olive oil to ensure even browning and crispiness.
- Air Fry the Egg Rolls: Set the air fryer to 350°F. Cook the egg rolls for a total of 12 minutes, flipping them halfway through the cooking time at about 7 minutes. Continue in batches if necessary to avoid overcrowding.
