- Slice the zucchini: Use a mandoline to slice zucchini into 1/8 inch (0.3 cm) thick slices for consistent cooking.
- Pat dry the zucchini: Use a paper towel to remove any excess moisture from the zucchini slices to ensure they crisp up properly.
- Preheat the air fryer: Set your air fryer to 325 degrees F (162 degrees C) while you prepare the zucchini.
- Prepare the zucchini slices: In a medium bowl, combine zucchini slices, olive oil, sea salt, and black pepper. Toss until all slices are evenly coated, making sure to separate any slices that stick together.
- Cook the zucchini slices: Place the zucchini chips in the air fryer in a single layer. Cook for 8-12 minutes, flipping halfway through. Check at the 8-minute mark and remove any slices that are browning or crisping. Continue to check every couple of minutes until all slices are done.
