  1. Slice the zucchini: Use a mandoline to slice zucchini into 1/8 inch (0.3 cm) thick slices for consistent cooking.
  2. Pat dry the zucchini: Use a paper towel to remove any excess moisture from the zucchini slices to ensure they crisp up properly.
  3. Preheat the air fryer: Set your air fryer to 325 degrees F (162 degrees C) while you prepare the zucchini.
  4. Prepare the zucchini slices: In a medium bowl, combine zucchini slices, olive oil, sea salt, and black pepper. Toss until all slices are evenly coated, making sure to separate any slices that stick together.
  5. Cook the zucchini slices: Place the zucchini chips in the air fryer in a single layer. Cook for 8-12 minutes, flipping halfway through. Check at the 8-minute mark and remove any slices that are browning or crisping. Continue to check every couple of minutes until all slices are done.
