Cream Cheese Frosting
- 8 ounces cream cheese, room temperature
- ¼ cup unsalted butter, room temperature
- 1 cup powdered sugar
Crumble
- ½ cup all purpose flour
- ⅓ cup light brown sugar, packed
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ¼ cup unsalted butter, melted
Instructions
- Activate the yeast: In a large bowl, combine yeast, sugar, and warm milk. Let sit for about 10 minutes until it starts bubbling, indicating the yeast is active.
- Make the dough: Stir in eggs and melted butter to the yeast mixture. Add 4 cups of flour and salt, mixing until combined. Gradually add remaining flour ¼ cup at a time until the dough cleans the sides of the bowl but may still stick slightly to the bottom.
- Proof the dough: Place the dough in a greased bowl, cover with plastic wrap, and leave in a warm environment for about 1 hour or until it doubles in size.
- Prepare the apple filling: In a medium saucepan over medium heat, melt butter with granulated and brown sugars. Add chopped apples, salt, and cinnamon. Cook for about 15 minutes until the apples soften, stirring occasionally. Let cool slightly.
- Prepare the baking pan: Grease a 9×13″ baking dish with butter and set aside.
- Roll out the dough: On a floured surface, roll the risen dough into a rectangle approximately 15×20 inches.
- Assemble the filling: Spread slightly melted butter over the dough, then sprinkle brown sugar and cinnamon evenly. Spoon the apple filling over the dough, spreading evenly.
- Shape the rolls: Roll the dough tightly starting from the long side of the rectangle. Slice into 12 equal rolls and place them in the prepared baking dish.
- Second proofing: Cover the rolls with plastic wrap and let them rise in a warm spot until doubled in size, about 30 minutes. If preparing overnight, cover and refrigerate; allow to come to room temperature and rise in the morning before baking.
- Bake the rolls: Preheat oven to 350°F (177°C). Bake the rolls for 30-35 minutes or until a thermometer inserted in the center reads 190°F (88°C). Cover with foil if tops brown too quickly.
- Make cream cheese frosting: Beat cream cheese and butter until smooth. Add powdered sugar and mix until combined.
- Prepare the crumble: Preheat oven to 350°F (177°C). Combine flour, brown sugar, cinnamon, and salt in a bowl. Stir in melted butter until just mixed. Spread mixture on a parchment-lined baking sheet.
- Bake the crumble: Bake for 12-15 minutes, breaking up the crumble halfway through baking. Remove when slightly hardened but not burnt. Let cool 10 minutes.
- Finish the rolls: Remove cinnamon rolls from the oven and cool on a wire rack. Spread cream cheese frosting on top, then sprinkle with cooled crumble. Store leftovers in an airtight container in the refrigerator for up to 3 days.
Notes
- The amount of flour can vary based on humidity. Start with 4 cups and add more to get the right dough consistency.
- Use a serrated knife or plain dental floss to cut the cinnamon rolls cleanly.
- You can prepare these rolls as an overnight recipe or bake the same day.
- Cream cheese frosting is ideal, but if preferred, use a glaze made from 2 cups powdered sugar and 4-5 tablespoons milk.
