Description

A flavorful homemade apple sage breakfast sausage recipe featuring ground pork, shredded apple, and a custom spice blend. Perfect for a hearty start to the day and easy to customize with extra heat or make-ahead options.

Main Ingredients:

    • 1 pound ground pork
    • 1 medium apple shredded, with the juice squeezed out (about 1/4 cup)
    • 1/4 cup minced onion

Breakfast Sausage Blend:

    • 2 tablespoons granulated onion
    • 2 tablespoons granulated garlic
    • 1 tablespoon dried parsley
    • 2 teaspoons ground cinnamon
    • 1 teaspoon dried ground sage
    • 1/2 teaspoon sea salt
    • 1/2 teaspoon ground black pepper

Other:

  • 1 to 2 fresh sage leaves, minced, plus additional whole leaves for garnish (optional)
  • 2 teaspoons ghee or butter for the pan

Instructions

  1. Mix the spice blend: In a bowl or a jar, combine the granulated onion, granulated garlic, dried parsley, ground cinnamon, dried sage, sea salt, and ground black pepper until evenly mixed.
  2. Prepare the sausage mixture: In a large mixing bowl, combine the ground pork, shredded apple (with juice squeezed out), minced onion, prepared spice blend, and minced fresh sage. Use your hands to mix everything together until fully incorporated. Form the mixture into 8 evenly sized patties.
  3. Cook the patties: Heat the ghee or butter in a large skillet over medium heat. Once the skillet is hot, add the sausage patties and cook for 3 to 5 minutes on each side, or until fully cooked and browned.
  4. Optional garnish: If desired, fry some whole sage leaves (about one per patty) in the remaining pork fat in the skillet until crispy. Use these fried sage leaves to garnish the sausage patties.

Notes

  • Use butter or ghee, not oil. The butter flavor pairs better with the sausage.
  • Preheat the skillet. Make sure it’s hot before adding the patties to achieve a delicious crisp edge.

  • Spice them up by adding cayenne pepper or red pepper flakes for a bit of heat.
