- 1 lb Ground Chicken (97/3 lean-to-fat ratio)
- 6 slices Bacon, cut into strips
- 2 Tbsp Ranch Seasoning

Instructions
- Cook the Bacon: In a large skillet over medium-high heat, cook the bacon strips until crispy. Once done, transfer the bacon to a paper towel-lined plate to drain excess grease.
- Cook the Ground Chicken: In the same skillet, add the ground chicken and cook thoroughly until no pink remains, breaking it apart with a spatula.
- Combine Ingredients: Return the cooked bacon pieces to the skillet with the chicken, sprinkle ranch seasoning evenly over the mixture, and stir well until the seasoning is fully incorporated and no longer visible. Remove the mixture to a bowl or plate and set aside.
- Prepare to Assemble: Heat the same skillet or a large griddle over medium-low to medium heat and spray lightly with cooking spray to prevent sticking.
- Assemble the Quesadillas: Place one tortilla in the skillet. On one half of the tortilla, sprinkle 2 tablespoons (approximately 14g) of shredded cheddar cheese, then add about 40-45g of the ground chicken and bacon mixture, followed by another 2 tablespoons of cheese on top.
- Cook the Quesadilla: Gently fold the tortilla over to cover the filling, pressing the top half down for a few seconds to help the cheese melt and seal the quesadilla. Cook for 1-2 minutes on each side or until the tortilla is golden brown. Adjust the heat if the tortillas brown too quickly to prevent burning.
- Repeat and Serve: Repeat the assembly and cooking process with the remaining tortillas and filling. Serve warm for best flavor and texture.
