Ingredients

Units Scale

Cherry Tomatoes

  • 4 cups cherry tomatoes sliced in half

Cucumbers

  • 1/2 English cucumber sliced and quartered

Herbs

  • 6 basil leaves torn or cut into thin strips

Cheese

  • 8 ounces bocconcini mozzarella pearls drained

Dressing

  • 1/4 cup balsamic vinaigrette salad dressing

Seasonings

  • Sea salt to taste
  • Cracked pepper to taste

Instructions

  1. Prepare the Tomatoes: Wash the cherry tomatoes thoroughly and cut them in half. Place them into a medium-sized bowl.
  2. Prepare the Cucumber: Wash the English cucumber, slice it into rounds, and then quarter each slice. Add the cucumber pieces to the bowl with the tomatoes.
  3. Add Basil: Tear or thinly slice the basil leaves and add them to the salad mixture.
  4. Add Mozzarella: Drain the bocconcini mozzarella pearls and add them to the bowl.
  5. Dress the Salad: Pour the balsamic vinaigrette over the ingredients and gently toss everything together to evenly coat.
  6. Season: Add sea salt and cracked pepper to taste. Toss again gently.
  7. Serve: Serve immediately or refrigerate for up to 2 hours for enhanced flavor. Use a slotted spoon to serve to avoid excess moisture.

Notes

  • Do not dress the salad until ready to serve to prevent it from becoming watery.
  • Use a slotted spoon when serving to drain excess dressing.
  • Best enjoyed fresh, but can be stored in an airtight container in the fridge for up to 2 days.
