  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 ripe bananas, chopped
  • Vegetable oil for frying

Glaze

  • 2 cups powdered sugar
  • 1/3 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon ground cinnamon

Instructions

  1. Fritter Batter: In a medium mixing bowl, whisk together eggs, milk, melted butter, and vanilla. Set aside.
  2. Dry Ingredients: In a large mixing bowl, combine flour, brown sugar, baking powder, salt, and cinnamon. Mix in the wet ingredients until just combined.
  3. Add Bananas: Mix in the chopped bananas.
  4. Frying: Heat vegetable oil in a pot to 350°F. Scoop portions of the fritter dough into the hot oil. Cook until golden brown.
