- 3 ripe bananas, chopped
- Vegetable oil for frying

- 2 cups powdered sugar
- 1/3 cup milk
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon ground cinnamon
Instructions
- Fritter Batter: In a medium mixing bowl, whisk together eggs, milk, melted butter, and vanilla. Set aside.
- Dry Ingredients: In a large mixing bowl, combine flour, brown sugar, baking powder, salt, and cinnamon. Mix in the wet ingredients until just combined.
- Add Bananas: Mix in the chopped bananas.
- Frying: Heat vegetable oil in a pot to 350°F. Scoop portions of the fritter dough into the hot oil. Cook until golden brown.
- Drain and Glaze: Remove fritters from oil, drain on paper towels. Prepare glaze by whisking powdered sugar, milk, vanilla, and cinnamon. Dip fritters in glaze and let excess drip off on a wire rack.
