Pasta:
- 3/4 – 1 lb thin spaghetti or angel hair pasta or gluten-free pasta
Shrimp:
- 1 1/2 lbs medium shrimp, peeled and deveined
- 1 tablespoon coconut oil
- 3 cloves garlic, minced
- 3 teaspoon paprika
- 1 tablespoon dried parsley
- Freshly ground black pepper to taste
Sauce:
- 1/2 cup mayonnaise or light mayonnaise
- 1/2 cup Thai sweet chili sauce
- 2 cloves garlic, minced
- 2 tablespoons lime juice
- 1/8 teaspoon crushed red pepper flakes
Instructions
- Mix the sauce: Combine all sauce ingredients in a bowl and set aside.
- Cook the pasta: Boil the pasta in a large pot of water, then drain well.
- Prepare the shrimp: Coat shrimp with paprika, garlic, and pepper. Cook in coconut oil until pink, about 6-8 minutes.
- Combine: In a serving bowl, mix pasta, shrimp, and sauce. Toss well.
