Description

These BBQ Chicken Flatbreads are a delicious and easy meal that the whole family will love. Tender chicken pieces seasoned with a blend of spices, paired with BBQ sauce, melted mozzarella, and colorful vegetables on crispy flatbreads – a perfect combination of flavors!


Ingredients

CHICKEN

  • 1 large boneless, skinless chicken breast (about 300 g/101/2 oz), cut into small bite-sized pieces
  • 1 tbsp olive oil
  • 1 tsp sweet paprika
  • 1/2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp sea salt flakes
  • 1/2 tsp cracked black pepper

FLATBREADS

  • 4 flatbreads
  • 1/4 cup (60 ml) store-bought BBQ sauce
  • 1 cup (150 g) shredded mozzarella
  • 1 small red onion, finely sliced
  • 1 small capsicum (bell pepper), finely sliced
  • 1 tbsp freshly chopped coriander (cilantro), to garnish

Instructions

  1. Chicken – Place the chicken in a bowl, add olive oil, paprikas, garlic powder, onion powder, salt, and pepper. Toss to coat.
  2. Heat a frying pan, cook chicken until browned and cooked through. Set aside.
  3. Flatbreads – Preheat oven, line baking tray, spread BBQ sauce on flatbreads, add mozzarella, chicken, onions, and capsicum.
  4. Bake in the oven until cheese is melted and bubbly. Sprinkle with coriander and serve.

Notes

  • You can use chicken thighs instead of chicken breast for a different flavor.
  • Feel free to use any type of flatbread or bread base you prefer.
  • If you’re not a fan of coriander, try using oregano, thyme, basil, or rosemary as alternatives.
