For the Quesadillas:
- 1.5 cups chopped cooked chicken
- 1 15oz. can black beans, drained
- 1/4 red onion
- 1 jalapeño
- 1/2 cup fresh cilantro
- 2 cups shredded cheddar
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1/2 cup BBQ Sauce
- 10 7-inch flour tortillas
Instructions
- Prepare the Filling: In a large bowl, combine the chopped chicken, black beans, red onion, jalapeño, cilantro, cheddar, chili powder, smoked paprika, salt, and BBQ sauce. Mix until well combined.
- Assemble the Quesadillas: Spread 1/3 cup of the filling on one half of each tortilla. Fold the tortillas closed.
- Cook the Quesadillas: Cook the filled tortillas in a skillet over medium-low heat until browned and crispy on the outside, and the cheese has melted.
- Serve: Cut each quesadilla in half and serve hot.
