Sweet Potatoes

- 2 medium sweet potatoes
- 1 large yellow onion
- 1 Tablespoon olive oil
- 1/4 teaspoon salt, divided
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chipotle powder or chili powder

- 1 Tablespoon olive oil
- 1/4 teaspoon salt

- 1 pound boneless skinless chicken breasts
- 1/2 cup BBQ sauce, divided
Instructions
- Preheat the oven: Preheat your oven to 400°F to prepare for roasting the vegetables and cooking the chicken.
- Prepare the sweet potatoes and onions: Peel and chop the sweet potatoes into 1/2″ chunks. Chop the onion into 1-inch pieces. Place both on a lined sheet pan, then toss with olive oil, salt, garlic powder, and chipotle powder until well coated. Bake for 20 minutes.
- Add the broccoli and chicken: Remove the sheet pan from the oven. Push the sweet potatoes and onions to one side of the pan. Add the broccoli and toss with olive oil and salt. Place the chicken breasts on the pan and brush with 1/4 cup of BBQ sauce. Return the pan to the oven and bake for 15-20 minutes, or until the chicken is fully cooked.
- Shred the chicken: Once cooked, remove the pan from the oven. Shred the chicken breasts using two forks and toss with the remaining BBQ sauce.
- Assemble and serve: Divide the roasted vegetables and shredded BBQ chicken between three bowls. Serve immediately for a hearty, healthy meal.
Notes
- If you prefer spicier flavors, increase the chipotle powder or chili powder amount in the sweet potato seasoning.
- Feel free to use your preferred BBQ sauce for the chicken.
- The recipe can easily be doubled to serve more people or for meal prep.
- Leftovers can be stored in the fridge for up to 3 days.
