Description

This Berry French Toast Casserole is a delightful and easy-to-make breakfast dish that combines tender cubes of French bread soaked in a sweet egg mixture, topped with fresh strawberries and blueberries, then baked to golden perfection. Perfect for weekend brunches, holidays, or special occasions, it’s served with powdered sugar and maple syrup for a comforting start to your day.

Ingredients

Units Scale

Dry Ingredients

  • 12-14 cups French bread
  • 8 large eggs
  • 2 cups 2% milk
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 2/3 cup brown sugar

Fruits

  • 1 cup strawberries, sliced
  • 1/2 cup blueberries

Toppings & Serve

  • 1-2 tbsp powdered sugar
  • Maple syrup, as much as desired

Instructions

  1. Prepare the casserole: Grease a 9″x13″ baking dish with vegetable oil or butter. Cut the French bread into cubes and distribute evenly in the dish, filling up to about three-quarters full.
  2. Make the egg mixture: In a large bowl, whisk together eggs, milk, vanilla extract, cinnamon, and brown sugar until well combined. Pour this mixture evenly over the bread cubes, pressing lightly so they absorb the liquid.
  3. Add fruits: Slice the strawberries and scatter them along with the blueberries on top of the casserole evenly.
  4. Refrigerate: Cover the casserole with plastic wrap and refrigerate for at least four hours or overnight to allow the bread to soak up the custard.
  5. Bake: Preheat the oven to 350°F (175°C). Bake the casserole for 35-50 minutes, checking at 35 minutes. Continue baking until the top is golden and the custard is set.
  6. Serve: Sprinkle with powdered sugar and serve warm with maple syrup for drizzling.

Notes

  • Use stale or dry bread for best absorption of the custard.
  • You can substitute other berries like raspberries or blackberries.
  • For a dairy-free version, use almond or oat milk and dairy-free bread.
  • If making ahead, prepare the casserole the night before and refrigerate overnight, then bake in the morning.
  • Adjust baking time based on your oven—it may take closer to 50 minutes for a completely set top.
