Description

This hearty breakfast casserole combines crispy hash browns, savory sausage, melted Cheddar cheese, and a flavorful egg mixture, all baked to perfection. It’s an ideal make-ahead dish perfect for weekend brunches or feeding a crowd, offering a comforting and satisfying start to the day.

Ingredients

Units Scale

Hash Browns

  • 1 (2 pound) package frozen hash brown potatoes, thawed

Meat and Vegetables

  • 1 pound pork sausage
  • 1 small onion, diced

Egg Mixture

  • 5 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • Salt and ground black pepper to taste

Cheddar Cheese

  • 12 ounces shredded Cheddar cheese

Instructions

  1. Gather all ingredients. Prepare your workspace by assembling all ingredients needed for the casserole.
  2. Preheat the oven. Set your oven to 350 degrees F (175 degrees C) and grease an 8-inch square baking dish to prevent sticking.
  3. Layer hash browns. Spread the thawed hash brown potatoes evenly in the prepared dish, creating a uniform base.
  4. Cook sausage and onion. Place the sausage and diced onion in a large skillet over medium heat. Cook, stirring frequently, until the sausage is browned and crumbled, about 10 minutes. Drain excess fat.
  5. Make egg mixture. In a large bowl, whisk together the eggs, milk, onion powder, garlic powder, salt, and pepper until thoroughly combined.
  6. Assemble casserole. Pour the egg mixture over the hash browns in the dish. Sprinkle with half of the shredded Cheddar cheese.
  7. Add sausage and cheese. Spread the cooked sausage and onion mixture evenly over the eggs, then sprinkle with the remaining Cheddar cheese.
  8. Bake covered. Cover the dish with aluminum foil and bake in the preheated oven for 1 hour.
  9. Finish baking. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and the top is golden.
  10. Rest before serving. Let the casserole stand for 5 minutes before slicing and serving.

Notes

  • For a spicier version, add chopped peppers or hot sauce to the egg mixture.
  • You can prepare this casserole a day in advance and store it covered in the refrigerator. Add a few extra minutes to the baking time if baking from cold.
  • Optional toppings include chopped chives, sliced green onions, or additional cheese.
