- 2 tablespoons milk
- 8 slices cheddar cheese (or 1 1/2 cups shredded)

- 4 thick slices sourdough bread
- 4 tablespoons unsalted butter, softened

Instructions
- Cook bacon: Fry the bacon strips in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain excess grease.
- Make scrambled eggs: In a bowl, whisk together eggs, milk, and black pepper. In the same skillet with bacon grease, cook the eggs over medium-low heat, stirring gently until softly scrambled. Remove to a bowl and set aside.
- Assemble the sandwiches: Place two slices of cheese on each bread slice. On two slices, layer three strips of bacon, then spoon the scrambled eggs on top. Cover with the remaining bread slices, cheese side down.
- Prepare for cooking: Gently butter the top of each assembled sandwich. Wipe out the skillet and heat over medium heat.
- Cook the sandwiches: Place the sandwiches in the skillet butter side down. Cook for 3-4 minutes, pressing gently with a spatula. Butter the tops and flip; cook another 3-4 minutes, pressing until golden and crispy.
- Serve: Remove from skillet, allow to cool for 1-2 minutes, then slice in half. Serve warm with optional spicy mayo, ketchup, or maple syrup.
