Ingredients:
- 1 pound ground turkey
- 1 medium head cauliflower or frozen riced cauliflower
- 1/2 cup buffalo wing sauce
- Salt and pepper to taste
- Chopped green onions and/or cilantro for garnish
Instructions
- Rice the Cauliflower: If using fresh cauliflower, process it in a food processor until ‘riced’. Set aside.
- Cook Turkey: In a greased skillet over medium-high heat, cook the ground turkey until browned.
- Add Cauliflower: Drain excess water from the skillet and add the riced cauliflower to the turkey. Season with salt and pepper, cooking until softened.
- Combine Buffalo Sauce: Stir in the buffalo sauce until well mixed.
- Finish and Serve: Remove from heat, garnish with chopped herbs, and serve.
Notes
- If using frozen riced cauliflower, use approximately 2 12-ounce bags to match the volume of fresh riced cauliflower.
