For the Chicken:

  • 1 1/2 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp Cajun seasoning
  • 1 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced

For the Mac and Cheese:

  • 4 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups chicken broth
  • 2 1/2 cups whole milk
  • 1 lb elbow macaroni
  • 1 cup Velveeta, cubed
  • 2 cups sharp cheddar cheese, shredded
  • 1 tsp kosher salt, to taste
  • 1 tsp black pepper, freshly cracked
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F.
  2. Season the Chicken: Season chicken with 1 tablespoon of Cajun seasoning.
  3. Cook the Chicken: Sear chicken in a skillet until browned, then add bell peppers and garlic.
  4. Prepare the Sauce: Create a roux with butter and flour, then add broth and milk.
  5. Cook the Macaroni: Stir in uncooked macaroni and Cajun seasoning, cook until tender.
  6. Combine Ingredients: Add Velveeta and cheddar cheese, then mix in cooked chicken and peppers.
  7. Bake: Spread mixture in a pan, top with cheese, pepper, and paprika. Bake for 10-15 minutes.
