Description

A delicious and gooey baked treat made with caramel, apples, and pecans, perfect for breakfast or dessert. This monkey bread combines soft bread rolls with sweet caramel sauce and is an irresistible pull-apart dish.

Bread and Filling

    • 2 loaves frozen bread
    • 2 large baking apples, peeled and chopped into 1/2 inch pieces
    • 1/2 cup pecan pieces

Caramel Sauce

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 package vanilla pudding mix (NOT instant)
  • 2 tablespoons milk
  • 1 teaspoon cinnamon

Instructions

  1. Prepare the Bread: Thaw the loaves of bread, but do not allow them to rise.
  2. Layer the Ingredients: Cut one loaf of bread into pieces and place it at the bottom of a greased 9×13 pan along with the chopped apples and pecans.
  3. Make the Sauce: In a medium microwave-safe bowl, melt the butter. Whisk in the brown sugar, vanilla pudding mix, milk, and cinnamon until well combined. Pour this mixture evenly over the bread and apples in the pan.
  4. Top with Second Loaf: Cut the second loaf of bread and layer it on top of the first layer of bread, apples, and sauce.
  5. Allow the Bread to Rise: Let the rolls rise for 2.5 to 3 hours, or until they are doubled in size.
  6. Preheat the Oven: Preheat your oven to 350°F.
  7. Bake the Monkey Bread: Bake the rolls uncovered for 50-60 minutes at 350°F, or until the tops are golden brown.
  8. Flip and Serve: Remove the pan from the oven. Place a large platter over the pan and carefully flip the rolls onto the platter. Scrape any remaining caramel from the pan onto the rolls.
  9. Cool and Serve: Allow the monkey bread to cool for 20 minutes before serving. Enjoy!

Notes

  • Ensure the bread is thawed completely but not allowed to rise before assembling the dish.
  • Be cautious when flipping the rolls out of the pan as the caramel sauce will be very hot.
  • This recipe can be made ahead by preparing the pan up to the rising step and refrigerating overnight. Bake the next morning.
  • You can substitute other nuts for pecans if desired, such as walnuts.
