Description

This Carnivore Egg White Bread is a high-protein, low-carb bread alternative perfect for those following a carnivore or ketogenic diet. Made primarily from eggs and protein powders, it offers a fluffy texture without the use of traditional flour. The recipe involves whipping egg whites to peaks, folding in whipped yolks and protein powders, then baking to create a moist, dense loaf ideal for sandwiches or toast.

  • 0.5 oz (15g) egg white powder
  • 0.4 oz (12g) whey protein isolate
  • 0.4 oz (12g) beef gelatine powder
  • 1/4 teaspoon xanthan gum
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt

Instructions

  1. Prepare oven and separate eggs: Preheat your oven to 320°F (160°C). Separate the eggs, placing the whites in a large mixing bowl and the yolks in a smaller bowl.
  2. Whip egg whites: Add salt and cream of tartar to the egg whites. Using an electric whisk, start whipping on low speed, then increase to high until stiff peaks form.
  3. Add dry ingredients to whites: Mix all remaining dry ingredients together. Sift half of this mixture over the whipped egg whites and whip well. Add the remaining half and continue whipping until the mixture becomes dense.
  4. Whip egg yolks: Using the same whisk, whip the egg yolks until they become creamy in texture.
  5. Combine yolks and whites: Gently fold the whipped yolks into the whipped egg whites using a silicone spatula, then combine using the electric whisk until the batter is thick and uniform.
  6. Prepare the mold and bake: Pour half of the batter into a 2lb silicone loaf mold. Tap the mold on the worktop to remove air pockets, then add the remaining batter.
  7. Baking process: Bake the bread for 30 minutes at 320°F (160°C). After baking, turn the oven off and leave the bread inside for an additional 25-30 minutes to finish cooking and set.
  8. Cool and serve: Remove the bread from the oven and let it cool completely before slicing. Serve and enjoy this delicious carnivore egg white bread.
