Instructions
- Cook bacon: In a large skillet over medium heat, cook bacon, flipping once, until crispy, about 8 minutes. Transfer the cooked bacon to a paper towel-lined plate to drain excess grease. Pour off all but 2 tablespoons of the bacon fat from the skillet.
- Season chicken: Season the chicken breasts generously with kosher salt and freshly ground black pepper on both sides. Sprinkle the ranch seasoning evenly over the chicken to infuse flavor.
- Cook chicken: Return the skillet with reserved bacon fat to medium-high heat. Add the chicken breasts and cook them until golden brown and cooked through, about 6-7 minutes per side depending on thickness. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
- Add cheese and bacon: Once chicken is cooked, reduce heat to low. Sprinkle shredded mozzarella evenly over each chicken breast, then crumble the cooked bacon on top of the cheese.
