Description

This Chicken Cordon Bleu Meatloaf recipe combines the flavors of the classic dish into a delicious and comforting meatloaf. For the meatloaf:

  • 2 lbs ground chicken
  • 1/2 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 large egg, beaten
  • 1 tablespoon Dijon mustard

  • 1 cup panko breadcrumbs, divided
  • 6 slices Black Forest ham
  • 6 slices Swiss cheese

For the sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 2 tablespoons Dijon mustard
  • 1/3 cup parmesan cheese, finely grated

Instructions

  1. Preheat the oven and prepare the pan: Preheat the oven to 350°F and grease a loaf pan. Set aside.
  2. Mix the meatloaf ingredients: Combine ground chicken, onion, garlic, egg, Dijon, parmesan, parsley, salt, pepper, and 1/4 cup breadcrumbs. Mix well.
  3. Form the meatloaf: Flatten the mixture into a rectangle. Layer ham and Swiss cheese. Roll up into a log and transfer to the pan.
  4. Top with breadcrumbs: Combine remaining breadcrumbs with melted butter and sprinkle over the meatloaf.
