Instructions

  1. Preheat the oven: Preheat your oven to 350°F and lightly grease a 9×13 casserole dish to prevent sticking.
  2. Cook the vegetables: Heat olive oil in a skillet over medium heat. Add the diced onion and bell pepper. Cook until softened, about 7 minutes. Add the minced garlic and cook for an additional minute, then transfer everything to a large mixing bowl.
  3. Prepare the sauce mixture: In the large mixing bowl, combine the cooked onion and pepper with diced tomatoes with chiles, cream of mushroom soup, cream of chicken soup, chicken broth, sour cream, cumin, chili powder, salt, and pepper. Mix well until fully combined.
  4. Layer the casserole: Spread a heaping ½ cup of the prepared sauce into the bottom of the greased casserole dish. Set aside another heaping ½ cup of sauce for later usage. Layer half of the shredded chicken over the base layer of sauce in the casserole dish. Add half of the remaining sauce mixture, followed by one-third of the shredded cheese and half of the crushed Doritos chips. Repeat the layers with the remaining chicken, sauce, cheese, and chips.
  5. Add reserved sauce: Spread the reserved ½ cup of sauce over the top layer and sprinkle the remaining shredded cheese evenly over the casserole.
  6. Bake the casserole: Bake the casserole uncovered at 350°F for 30 minutes. Without opening the oven door, increase the oven temperature to 400°F and bake for an additional 5 to 10 minutes, or until the casserole is bubbly and golden crisp.
