Description

This hearty Chicken Potato Casserole features tender, cubed chicken and perfectly seasoned potatoes baked together until golden and tender. Topped with melted cheddar cheese, crispy bacon, and fresh green onions, it’s a comforting and satisfying one-dish meal perfect for family dinners.

Ingredients

Scale

Chicken and Potatoes

  • 1 ½ pounds chicken breasts, cut into 1″ cubes
  • 5 potatoes, cut into ½” cubes

Seasoning and Oil

  • 3 Tbsp olive oil
  • 1 ½ tsp smoked paprika
  • 1 Tbsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper

Toppings

  • 2 cups shredded cheddar cheese
  • ½ cup cooked crumbled bacon
  • 2 green onions, sliced

Instructions

  1. Prepare the chicken and potatoes: Place the cubed chicken breasts and potatoes in a large mixing bowl.
  2. Mix oil and seasonings: In a separate bowl, whisk together olive oil, smoked paprika, garlic powder, salt, and pepper until well combined.
  3. Toss chicken and potatoes: Pour the seasoned oil mixture over the chicken and potatoes, stirring thoroughly to coat all pieces evenly.
  4. Transfer to baking dish: Pour the seasoned chicken and potato mixture into a greased 9×13 inch casserole pan, spreading it out evenly.
  5. Bake: Bake uncovered in a preheated oven at 400°F (204°C) for 50-55 minutes, or until the potatoes are tender and the chicken is cooked through.
  6. Add toppings: Remove the casserole from the oven, sprinkle the shredded cheddar cheese, crumbled bacon, and sliced green onions evenly over the top.
  7. Final bake: Return the casserole to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Notes

  • For a crispier top, you can broil the casserole for 1-2 minutes after baking, watching carefully to avoid burning.
  • Using a variety of potatoes, such as Yukon Gold and Russets, can add texture and flavor.
  • To make this dish lower in fat, use reduced-fat cheese and turkey bacon.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Feel free to add vegetables like bell peppers or mushrooms for added nutrition and flavor.
