Description

This Cheesy Ground Beef and Rice Casserole is a comforting and hearty dish that combines flavorful ground beef, tender rice, creamy mushrooms, and gooey cheddar cheese. It’s a one-pot wonder that’s perfect for a cozy family dinner.


Ingredients

Ground Beef Mixture:

  • 1 lb. ground beef 85% lean
  • 1.5 teaspoons Italian seasoning
  • Salt/Pepper

Rice Mixture:

  • 3 Tablespoons butter divided
  • 3/4 cup onions diced
  • 1 Tablespoon garlic minced
  • 2 1/2 cups beef broth
  • 1 1/4 cups uncooked white long grain rice (not instant rice)
  • 8 oz. sliced button mushrooms washed
  • 10.5 oz. cream of mushroom soup
  • 1/2 cup milk any kind
  • 1/2 cup sour cream
  • 2 cups cheddar cheese divided

Instructions

  1. Preheat oven to 350 degrees. Brown the ground beef in a large pot with salt, pepper, and Italian seasoning. Drain and set aside.
  2. In the same pot, melt 2 tbsp butter and cook onions until softened. Add garlic.
  3. Add beef broth, butter, and rice. Bring to a boil, then simmer covered for 10 minutes.
  4. Add mushrooms and cook for additional 5-10 minutes. Let stand for 10 minutes.
  5. Combine cooked beef, soup, milk, sour cream, and half of the cheese. Transfer to a casserole dish.
  6. Top with remaining cheese. Cover and bake for 20 minutes.
  7. Serve hot and enjoy!

Notes

  • To make ahead, assemble, cover, and refrigerate for up to 2 days. Bake after sitting out for 30 minutes.
