Ingredients for Cheesy Pinto Beans:
- 2 cloves garlic, minced
- 1 jalapeño (optional), finely diced
- 1 Tbsp cooking oil
- 2 15oz. cans pinto beans
- 1/4 tsp smoked paprika
- 1/4 tsp ground cumin
- 1/8 tsp freshly cracked black pepper
- 2 dashes hot sauce
- 1/2 cup shredded cheddar cheese
Instructions
- Mince the garlic and dice the jalapeño: Remove the stem and seeds from the jalapeño.
- Purée one can of pinto beans: Blend with the liquid from the can.
- Add puréed beans and second can: Combine in the pot with garlic mix.
- Season the beans: Add smoked paprika, cumin, pepper, and hot sauce. Heat through.
- Add cheddar cheese: Stir until melted and smooth. Adjust seasoning to taste.
- Serve over rice or with your favorite dish.
