Pizza Rice Muffins
- 4 cups cooked rice (white or brown)
- 2 cups shredded mozzarella cheese
- 6 ounce bag pepperoni, quartered*
- 2 Tablespoons onion flakes
- 2 Tablespoons parsley flakes
- 1/2 teaspoon oregano
- 2 teaspoons garlic salt
- 4 eggs, whisked
- 1/2 cup grated Parmesan cheese
- 1/2 cup sliced olives (OPTIONAL)

- Pizza sauce for serving
Instructions
- Preheat the oven. Preheat your oven to 375°F to get it ready for baking the muffins.
- Mix the ingredients. In a large bowl, combine all the ingredients including the rice, mozzarella cheese, pepperoni, onion flakes, parsley flakes, oregano, garlic salt, whisked eggs, Parmesan cheese, and optional olives. Mix thoroughly until well combined.
- Portion into muffin cups. Divide the mixture evenly among 6 greased muffin cups. Use the back of a spoon to press the mixture firmly into the tins.
- Bake the muffins. Place the muffin tin on a baking sheet and bake at 375°F for 16-18 minutes, or until the tops are lightly golden brown.
- Release and serve. Remove the muffins from the oven and use a butter knife to carefully release them from the pan by swiping it around the edges. Serve warm with pizza sauce for dipping.
Notes
- Microwave the pepperoni in a microwave-safe bowl for 1 minute to remove some of the grease before adding it to the other ingredients.
