- 2 tsp ground cumin
- 1 tbsp olive oil
- 1 tsp garlic powder
For the Queso Sauce
- 1 1/2 cups whole milk
- A pinch of salt and pepper, to your liking
- 1/2 tsp ground cumin
- 2 cups cheddar cheese, shredded
- 2 tbsp butter
- 1 tsp chili powder
- 2 garlic cloves, chopped finely
- 1 cup Monterey Jack cheese, shredded
For the Rice
- 2 cups broth (or water if you prefer)
- A bit of salt, as needed
- 1 tbsp olive oil
- 1 cup long-grain white rice
- 1 tsp garlic powder
Optional Garnishes
- Fresh cilantro, chopped
- Wedges of lime
- Slices of avocado
- Cut jalapeños
Instructions
- Prepare the Queso Sauce: In a skillet, melt butter and cook minced garlic. Add milk and bring to a simmer.
- Cook the Rice: Rinse rice, toast with olive oil and garlic powder, then simmer in broth or water.
- Season and Cook the Steak: Rub steak with spices, cook in a hot skillet, and slice thinly.
- Create the Queso Sauce: Melt cheeses gradually, season, and stir until smooth.
- Garnish and Serve: Top with cilantro, jalapeños, avocado, and lime. Serve hot.
