- Roast the Cherries: Preheat oven to 400°F. Spread cherries on a baking sheet, sprinkle with sugar, and bake for 10 minutes. Let cool.
- Prepare Brownie Batter: Preheat oven to 325°F. Line an 8×8 pan with parchment paper. Sift together flour, cocoa powder, cornstarch, and salt. In a mixer, beat sugar, eggs, and egg yolk. Add melted butter, oil, and vanilla. Fold in dry ingredients. Add cherries and chocolate chips.
- Bake: Pour batter into pan and bake for 40-50 minutes. Top with extra chocolate chips. Cool in the pan.
- Serve: Freeze brownies for 15 minutes, then top with remaining cherries, cut, and serve.
