Description

This Chicken Avocado Melt Sandwich is a deliciously satisfying meal combining juicy, pan-seared chicken breasts with creamy avocado, melted cheese, and fresh veggies all layered between crispy grilled bread. Perfect for a quick lunch or dinner, it balances savory flavors with creamy and tangy elements for a crowd-pleasing sandwich.

Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Filling

  • 1 avocado, sliced
  • 4 slices cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

Bread & Condiments

  • 4 slices bread (sourdough, ciabatta, or choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Butter or olive oil for grilling

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the skillet and let rest for a few minutes before slicing thinly.
  2. Prepare the Avocado and Cheese: Slice the avocado and set aside. Arrange the cheese slices to be ready for assembling the sandwich.
  3. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread evenly to add flavor and moisture.
  4. Assemble the Sandwiches: On two slices of bread, layer the sliced chicken, avocado, and cheese. Add a few slices of red onion and tomato on top. Cover with the remaining bread slices, mayo side down.
  5. Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add a small amount of butter or olive oil. Place the sandwiches in the skillet and cook for 3-4 minutes per side until the bread is golden brown and the cheese has melted. Press gently with a spatula to help the cheese melt evenly.
  6. Serve: Remove sandwiches from the skillet and let cool for a minute. Slice in half and serve warm for the best texture and flavor.

Notes

  • Store leftovers in an airtight container in the refrigerator.
  • Reheat sandwiches in a toaster oven or regular oven to keep the bread crispy.
  • Avoid microwaving leftovers to prevent soggy bread.
