Pasta:
- 1 pound dry short pasta (Campanelle is pictured)
- 3 teaspoons olive oil
- 6 strips thick-cut bacon, diced small
Sauce:
- 3 tablespoons reserved bacon grease
- 2 cloves garlic, minced
- 3 tablespoons flour
- 3 cups whole milk
- 1 packet ranch seasoning
- 2 ounces cream cheese, cubed
- 1 cup grated Monterey Jack cheese
- 2 cups heaping cups shredded rotisserie chicken breast
- Salt and pepper, to taste
- Additional cheese and crumbled bacon, for serving
Instructions
- Cook Pasta: Boil salted water, cook pasta, reserve pasta water, toss with olive oil.
- Cook Bacon: Crisp bacon in pot, drain on paper towel.
- Make Sauce: Sauté garlic, add flour, whisk in milk, bring to a boil, add cheeses and ranch seasoning.
- Combine: Add pasta, chicken, bacon to sauce, warm through, adjust seasoning.
- Serve: Garnish with cheese and bacon, serve immediately.
Notes
- For a spicier kick, consider adding a pinch of red pepper flakes to the sauce.
- This dish reheats well, but may need a splash of milk or broth to loosen the sauce when reheating.
