Chicken Salad:
- 3 1/2 cups cooked chicken, shredded
- 2 stalks celery, chopped
- 2/3 cups red grapes, halved
- 1/2 cup chopped pecans
- 1/2 medium red onion, diced
Dressing:
- 2/3 cup mayonnaise
- 2 Tablespoons plain Greek yogurt or sour cream
- 2 Tablespoons chopped parsley (optional)
- 1 teaspoon Dijon mustard
- 1/2 teaspoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, prepare the dressing: Stir together mayonnaise, yogurt, Dijon mustard, lemon juice, salt, and pepper.
- Combine ingredients: Add the chicken, celery, grapes, pecans, onion, and parsley to the bowl; toss to combine.
- Chill and serve: Cover the salad and refrigerate until serving. Enjoy on a bun, bed of lettuce, or with crackers.
Notes
- Although not required, it’s recommended to refrigerate for at least 1 hour for the flavors to meld.
