Description

A creamy and delicious recipe combining the rich flavors of spinach and asiago chicken sausage with a classic Fettuccine Alfredo, perfect for a quick and satisfying pasta dish.

Main Ingredients

    • 2 Tbsp. olive oil, divided
    • 1 small red onion, thinly sliced
    • 1 pint cherry tomatoes
    • 1 package (4 links) Gold’n Plump Spinach & Asiago Chicken Sausages
    • 12 oz fettuccine pasta

Sauce and Additional Ingredients

  • 1/2 c. reserved pasta water
  • 15 oz jar Alfredo sauce
  • 2/3 c. grated Parmesan

Instructions

  1. Heat olive oil and cook onions. In a large skillet over medium-high heat, add 1 tablespoon of olive oil and the thinly sliced red onions. Sprinkle a pinch of salt and stir occasionally while the onions cook.
  2. Cook the pasta. Meanwhile, bring a large pot of salted water to a boil and add the fettuccine pasta. Cook according to the package directions until al dente.
  3. Add sausage and tomatoes to the skillet. After the onions have cooked for about 6 minutes, push them to one side of the pan. Slice the chicken sausages diagonally into 1/4-inch pieces. Add the sausages, the remaining tablespoon of olive oil, and the cherry tomatoes to the skillet. Cook everything for 4-5 minutes, or until the sausage is heated through and the tomatoes are slightly blistered.
  4. Combine pasta, sauce, and ingredients. Drain the pasta and reserve 1/2 cup of the pasta water. Add the cooked fettuccine, reserved pasta water, Alfredo sauce, and grated Parmesan to the skillet with the sausage and vegetables. Toss everything together until well combined and the sauce is heated through.
  5. Serve. Serve the Fettuccine Alfredo immediately while it’s hot and creamy. Garnish with additional Parmesan, if desired.

Notes

  • Add some fresh basil or parsley for garnish to elevate the presentation.
  • For a lighter option, use a lower-calorie Alfredo sauce.
  • You can substitute the chicken sausage with turkey sausage or a plant-based sausage alternative for dietary preferences.
  • Ensure you don’t overcook the pasta; it should still be firm for the perfect texture.
