Mushroom Filling:
- 1 1/2 lbs about 18 fresh mushrooms (about 1 1/2″ in diameter)
- 1 med/large yellow onion, finely diced
- 1/2 tsp salt
- 1/8 tsp black pepper
- 2 Tbsp unsalted butter
Cream Cheese Filling:
- 8 oz cream cheese, regular or low fat
- 10 oz can of chicken, well drained
- 3/4 cup finely grated mozzarella cheese
Instructions
- Prepare Mushrooms: Wipe down mushrooms, remove stems, and scoop out centers. Chop stems and mushroom pieces.
- Saute Onion and Mushrooms: Cook onion and mushrooms in butter until softened. Season with salt.
- Make Cream Cheese Filling: Combine cream cheese, chicken, and pepper in a bowl; mash together.
- Combine Fillings: Mix sauteed mushroom-onion with cream cheese mixture.
- Fill Mushrooms: Use a scoop to fill mushrooms with the mixture. Top with mozzarella.
- Bake: Bake at 400˚F for 10-12 minutes until tender. Serve hot.
Notes
- If there is leftover stuffing, it can be used as a delicious dip.
- These stuffed mushrooms reheat well in the microwave.
