Description

These Chicken Stuffed Mushrooms are a delightful appetizer that is sure to impress your guests. Juicy mushrooms are filled with a savory mixture of cream cheese, chicken, and mozzarella cheese, creating a flavorful bite-sized treat.

Mushroom Filling:

  • 1 1/2 lbs about 18 fresh mushrooms (about 1 1/2″ in diameter)
  • 1 med/large yellow onion, finely diced
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 2 Tbsp unsalted butter

Cream Cheese Filling:

  • 8 oz cream cheese, regular or low fat
  • 10 oz can of chicken, well drained
  • 3/4 cup finely grated mozzarella cheese

Instructions

  1. Prepare Mushrooms: Wipe down mushrooms, remove stems, and scoop out centers. Chop stems and mushroom pieces.
  2. Saute Onion and Mushrooms: Cook onion and mushrooms in butter until softened. Season with salt.
  3. Make Cream Cheese Filling: Combine cream cheese, chicken, and pepper in a bowl; mash together.
  4. Combine Fillings: Mix sauteed mushroom-onion with cream cheese mixture.
  5. Fill Mushrooms: Use a scoop to fill mushrooms with the mixture. Top with mozzarella.
  6. Bake: Bake at 400˚F for 10-12 minutes until tender. Serve hot.

Notes

  • If there is leftover stuffing, it can be used as a delicious dip.
