Ingredients
Chicken:
- 1 lb boneless skinless chicken breast (or thigh)
Marinade:
- 1 tablespoon Shaoxing wine (or dry sherry)
1/2 teaspoon salt
1 teaspoon cornstarch
Sauce:
- 3 tablespoons oyster sauce
2 tablespoons Shaoxing wine (or dry sherry)
1/2 tablespoon dark soy sauce (or soy sauce)
1/4 cup chicken stock
1 tablespoon sugar
1 tablespoon cornstarch
1/4 teaspoon salt
Stir-fry:
- 1 head broccoli, chopped into bite-sized florets
2 tablespoons peanut oil (or vegetable oil)
4 cloves garlic, minced
1 teaspoon ginger, minced
Instructions
- Prepare Marinade: Slice the chicken into thin bite-size pieces. Combine chicken with marinade ingredients. Let sit for 10 minutes.
- Make Sauce: Mix all sauce ingredients in a bowl.
- Steam Broccoli: Steam broccoli until just tender. Remove from pan.
- Stir-fry Chicken: Cook chicken until browned. Add garlic and ginger.
- Combine: Add broccoli back to the pan. Pour in sauce and cook until thickened.
- Serve: Enjoy hot with rice or noodles.
