Main Ingredients
- 1 cup blueberries
- 1/2 cup pecans, chopped
- 1 cup low-fat cottage cheese, blended
- 1 tbsp maple syrup
- 1 tsp vanilla extract
Chocolate Coating
- 1 1/2 cups dark chocolate chips
- 1 tbsp coconut oil
- A pinch sea salt
Instructions
- Prepare workspace: Cover a chopping board with parchment paper to prevent sticking and make cleanup easier while forming the clusters.
- Combine ingredients: In a large bowl, mix together the blueberries, chopped pecans, blended low-fat cottage cheese, maple syrup, and vanilla extract until well combined.
- Form clusters: Using about 2 tablespoons of the mixture per cluster, shape the mixture into small clusters and place them on the parchment-lined chopping board.
- Freeze clusters: Place the clusters in the freezer for 90 minutes. This chills them enough so they hold together but keeps the inside soft.
- Melt chocolate coating: Just before removing the clusters, combine the dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second increments, stirring between each until smooth and melted.
- Dip clusters in chocolate: Remove clusters from the freezer and dip each one into the melted chocolate, covering them completely. Return them to the parchment paper on the chopping board.
- Finish with drizzle and salt: Use a spoon to drizzle chocolate on any uncovered areas of the clusters and quickly sprinkle with a pinch of sea salt before the chocolate hardens.
- Store and serve: Keep the clusters refrigerated until ready to serve. For ease of eating, cut them in half before serving.
Notes
- Blending the cottage cheese gives the clusters a smooth texture and helps bind the mixture.
- Freezing time is important to allow clusters to firm up enough to dip without falling apart.
- Use dark chocolate of at least 70% cacao for a rich flavor and less sugar.
- Adding a pinch of sea salt enhances the chocolate and blueberry flavors.
- Store the clusters in the fridge to maintain freshness and texture.
