Description

Ingredients

Dry Ingredients:

  • 1 1/4 cup Mochiko (190 g)
  • 1 rounded teaspoon baking powder
  • 1/4 cup cocoa powder
  • 3/4 cup granulated sugar
  • A big pinch of kosher salt

Wet Ingredients:

  • 2 oz unsalted butter – melted
  • 1/2 cup dark chocolate chip (~ 3 oz)
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 1 cup unsweetened canned coconut milk
  • Extra butter for pan

Instructions

  1. Preheat oven to 350°F. Brush pan with butter and line with parchment paper.
  2. In a bowl, mix dry ingredients.
  3. Melt butter, add chocolate chips, and mix.
  4. In a large bowl, beat vanilla, eggs, coconut milk, add butter-chocolate mixture.
  5. Stir in dry ingredients until smooth.
  6. Pour mixture into pan and bake for 25-30 minutes.
  7. Cool completely before cutting.

Notes

  • Refrigerate leftovers and reheat in the microwave.
  • Use either natural or dutch processed cocoa powder.
  • Opt for canned coconut milk for better flavor.
