Dry Ingredients:
- 1 1/4 cup Mochiko (190 g)
- 1 rounded teaspoon baking powder
- 1/4 cup cocoa powder
- 3/4 cup granulated sugar
- A big pinch of kosher salt
Wet Ingredients:
- 2 oz unsalted butter – melted
- 1/2 cup dark chocolate chip (~ 3 oz)
- 1 teaspoon pure vanilla extract
- 2 large eggs
- 1 cup unsweetened canned coconut milk
- Extra butter for pan
Instructions
- Preheat oven to 350°F. Brush pan with butter and line with parchment paper.
- In a bowl, mix dry ingredients.
- Melt butter, add chocolate chips, and mix.
- In a large bowl, beat vanilla, eggs, coconut milk, add butter-chocolate mixture.
- Stir in dry ingredients until smooth.
- Pour mixture into pan and bake for 25-30 minutes.
- Cool completely before cutting.
Notes
- Refrigerate leftovers and reheat in the microwave.
- Use either natural or dutch processed cocoa powder.
- Opt for canned coconut milk for better flavor.
