- 3 cups crushed vanilla wafer cookies
- ¾ cup confectioners’ sugar
- ¼ cup unsweetened cocoa powder
- 1 ½ cups finely chopped pecans
Wet Ingredients
- 1 teaspoon pure vanilla extract
- 3 tablespoons light corn syrup
- ½ cup spiced rum
Instructions
- Mix Dry Ingredients: In a large bowl, combine the crushed vanilla wafers, ¾ cup confectioners’ sugar, cocoa powder, and chopped pecans. Stir thoroughly to evenly distribute all dry components.
- Add Wet Ingredients: Drizzle in the vanilla extract, light corn syrup, and spiced rum over the dry mixture. Stir well to incorporate all ingredients into a sticky dough.
- Shape Rum Balls: Using about 4 teaspoons of the mixture per ball (equivalent to two level scoops from a small cookie scoop), form the dough into approximately 1 inch-sized balls by rolling them gently between your palms.
- Coat and Store: Optionally, roll each Rum Ball in additional confectioners’ sugar, cocoa, sprinkles, or any preferred coating to add texture and flavor. Place the finished Rum Balls in an airtight container and refrigerate for several days to allow the flavors to meld and develop.
- Serve: Before serving, you may need to recoat with confectioners’ sugar if they have softened. Present them in mini cupcake liners for a festive touch.
