Description

These Cinnamon Breakfast Bites are delightful little treats combining a crispy Rice Krispies texture with a warm cinnamon sugar coating. Perfect for a quick breakfast or snack, they bake to a golden finish and offer a sweet, buttery bite every time.

Ingredients

Scale

Dry Ingredients

  • 1⅓ cups flour
  • 1 cup Rice Krispies Cereal, coarsely crushed
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Wet Ingredients & Coating

  • ¼ cup butter flavored shortening
  • ½ cup milk
  • 1⅓ teaspoons cinnamon (divided: 1½ teaspoons in instructions but 1⅓ here – adjusted to 1½ teaspoons in recipe)
  • ⅔ cup sugar
  • ⅓ cup butter, melted

Instructions

  1. Combine Dry Ingredients: In a mixing bowl, whisk together the flour, coarsely crushed Rice Krispies Cereal, 2 tablespoons sugar, baking powder, and salt until evenly mixed.
  2. Cut in Shortening: Add the butter flavored shortening to the dry mixture and use a pastry cutter or your fingers to cut it in until the mixture resembles coarse crumbs.
  3. Add Milk: Stir in the milk just until moistened. The dough will be somewhat dry; if it feels too dry, add an extra teaspoon of milk to lightly moisten it. Avoid overmixing to keep the texture light.
  4. Shape into Bites: Form the dough into 1-inch balls, ensuring they are compact.
  5. Prepare Cinnamon Sugar Coating: In a small bowl, mix the cinnamon and the ⅔ cup sugar thoroughly.
  6. Coat the Bites: Dip each dough ball into the melted butter, then roll it thoroughly in the cinnamon sugar mixture to coat all sides.
  7. Arrange in Baking Dish: Place the coated balls in a single layer within an 8 x 8-inch baking dish that has been lightly sprayed with non-stick cooking spray to prevent sticking.
  8. Bake: Preheat oven to 420°F (215°C). Bake the bites for 15 to 17 minutes until they are golden brown and cooked through.
  9. Serve and Store: Remove from oven and allow to cool slightly before serving. Store leftover bites in an airtight container in the refrigerator for up to 4 days or freeze in a freezer bag for up to 3 months.

Notes

  • Store leftover bites in an airtight container in the fridge for up to 4 days.
  • For longer storage, freeze the bites in a freezer bag for up to 3 months.
  • If dough is too dry, add a little extra milk to help it come together.
  • Make sure to coat each ball well in butter and cinnamon sugar for the best flavor and texture.
