Ritz Churro Bites:

  • 8.8 ounces peanut butter Ritz bits cracker sandwiches

Cinnamon Sugar Coating:

  • 1/2 cup salted sweet cream butter
  • 1/3 cup light brown sugar, packed
  • 2 tablespoons light brown sugar
  • 3/4 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons granulated sugar
  • 3/4 teaspoon ground cinnamon

Instructions

  1. Preheat the oven: Preheat the oven to 350°F. Line a baking sheet with 2 layers of heavy-duty aluminum foil.
  2. Prepare the crackers: Spread the Ritz bits crackers in a single layer on the prepared baking sheet.
  3. Make the butter mixture: In a saucepan, combine butter, light brown sugar, vanilla extract, and cinnamon. Boil for 1 to 1½ minutes, stirring frequently.
  4. Coat the crackers: Spoon the butter mixture over the crackers and toss to coat. Bake for 10 minutes.
  5. Prepare the cinnamon sugar: Mix granulated sugar and cinnamon in a bowl.
  6. Finish the churro bites: Sprinkle cinnamon sugar over the baked crackers. Cool, break them apart, and serve.
