Bread Dough

- 1 cup warm milk (105°F)
Herbed Butter Topping
- 4 tablespoons unsalted butter, melted (divided)
- 1 tablespoon dried onion powder
- 1 teaspoon dried oregano
- 2 teaspoons garlic powder
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 3 tablespoons grated Parmesan cheese
Instructions
- Make the bread dough: Combine the bread flour, yeast, salt, granulated sugar, 6 tablespoons melted butter, warm water, and warm milk in the bowl of a stand mixer fitted with a dough hook. Mix on low speed until ingredients are incorporated, then increase to high speed and knead until the dough is smooth and elastic, which may take several minutes.
- First rise: Transfer the dough to a large greased bowl (lightly coated with olive oil), cover with plastic wrap, and let it rise in a warm place or proof setting of an oven for about 1 hour or until doubled in size.
- Shape breadsticks: Roll the risen dough out on a floured surface to an 18 x 13-inch rectangle. Transfer the dough to an 18 x 13-inch baking sheet. Using a pizza cutter, make a long slit down the center lengthwise, then cut across into 10 sections widthwise to create 20 breadsticks total.
- Second rise: Cover the dough and allow it to rise again for 30 minutes to 1 hour until slightly puffed.
- Prepare herbed butter: In a small bowl, mix 2 tablespoons melted unsalted butter with dried onion powder, dried oregano, garlic powder, dried basil, and salt until well combined.
- Bake the breadsticks: Preheat the oven to 470°F. Brush the dough evenly with the remaining 2 tablespoons melted butter. Bake the breadsticks for 10-12 minutes or until golden brown.
- Add topping and serve: Immediately brush the hot breadsticks with the prepared herbed butter mixture, then sprinkle evenly with grated Parmesan cheese. Slice all the way through the scored lines to separate the breadsticks. Serve warm with marinara sauce.
Notes
- Freezing dough: Freeze the dough on a baking sheet until solid, then transfer to a freezer-safe ziplock bag. Defrost overnight in the refrigerator. Let the dough rise for 30 minutes before shaping and baking.
- Freezing baked breadsticks: Freeze cooled breadsticks (without herbed butter and Parmesan) in an airtight container or ziplock bag. Defrost overnight in the refrigerator and warm in the oven before adding the toppings and serving.
