Description

These Cranberry Brie Bites are delectable mini appetizers featuring creamy Brie cheese wrapped in buttery crescent dough, topped with tangy whole berry cranberry sauce and fresh rosemary. Perfectly golden and warm, they are ideal for holiday gatherings or any festive occasion.

Ingredients

Scale

Dough

  • All-purpose flour (for dusting the dough and cutting board)
  • 8 ounce crescent dough sheet (or crescent rolls)

Filling

  • 8 ounce wheel of brie cheese
  • 1 cup whole berry cranberry sauce (not jellied)
  • Fresh rosemary sprig (about 2 sprigs, depending on length)

Instructions

  1. Prepare Oven and Muffin Tin: Preheat your oven to 375°F (190°C). Spray a 24-count mini muffin tin with cooking spray to prevent sticking.
  2. Roll and Cut Dough: Lightly dust your countertop or cutting board with all-purpose flour. Roll out the 8-ounce crescent dough sheet into a flat surface. If using crescent rolls, pinch the seams to form one continuous long sheet. Cut the dough into 24 equal squares.
  3. Place Dough in Muffin Tin: Place each dough square neatly into the slots of the prepared mini muffin tin, gently pressing to form little cups.
  4. Prepare Brie Cheese: Cut the 8-ounce wheel of Brie cheese into small pieces that will fit inside each dough cup.
  5. Add Brie and Cranberry Sauce: Place a piece of Brie in each dough cup, then top generously with a spoonful of whole berry cranberry sauce.
  6. Garnish with Rosemary: Add a small piece of fresh rosemary sprig on top of the cranberry sauce for a lovely aromatic touch.
  7. Bake the Bites: Place the muffin tin in the preheated oven and bake for approximately 15 minutes, or until the crescent dough is a light golden brown and the cheese is melted.
  8. Serve Warm: Remove from the oven and serve the cranberry brie bites warm for the best flavor and texture.

Notes

  • Use whole berry cranberry sauce—not jellied—for the best texture and flavor contrast.
  • Ensure the rosemary pieces are small to avoid overpowering the bite.
  • For easier handling, chill the Brie slightly before cutting.
  • These bites are best served warm but can be prepared ahead and reheated briefly before serving.
  • Substitute with gluten-free crescent dough if needed for dietary restrictions.
