This cheesy chicken pasta is a creamy and flavorful dish that’s quick and easy to make. Tender chicken pieces are cooked in a rich, cheesy sauce and tossed with perfectly cooked pasta for a comforting meal.

Pasta:
- 250g pasta, uncooked (around 8oz)
Cheesy Chicken:
- 2 tbsps oil
- 4 cloves garlic, minced
- 275g chicken, cut into bite-sized pieces (around 9.6 oz)
- 1/2 tsp salt (adjust to your taste)
- 1/2 tsp black pepper
- 1/2 tsp red chilli powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp onion powder
- 1/4 tsp oregano
- 2 tbsps tomato paste
- 1 tsp chilli sauce/sriracha
- 130ml milk (1/2 cup + 1 tbsp)
- 110ml double cream (1/4 cup + 3 tbsps)
- 100g mozzarella cheese + extra to sprinkle on top (1 cup + extra)
- 100–120ml pasta water (around 1/2 cup)
Instructions
- Boil Pasta: Add pasta to a pot with cold water, salt, and a bit of oil. Cook until al dente.
- Cook Garlic: Sauté minced garlic in oil until golden.
- Cook Chicken: Add chicken pieces, cook until white.
- Seasonings: Add salt, pepper, spices, and mix.
- Add Tomato Paste: Stir in sriracha and tomato paste.
- Making the Sauce: Gradually add milk and cream, cook until bubbling.
- Add Cheese: Mix in cheese until melted.
- Add Pasta Water: Gradually add pasta water, bring to a boil.
- Add Pasta: Mix in cooked pasta, top with cheese, cover, and cook until melted.
- Serve and enjoy!
Notes
- Adjust salt to taste due to salt in pasta water and cheese.
- Feel free to add more pasta water for desired consistency.
- If you don’t have oregano, substitute with Italian seasoning or mixed herbs.
