Description

This cheesy chicken pasta is a creamy and flavorful dish that’s quick and easy to make. Tender chicken pieces are cooked in a rich, cheesy sauce and tossed with perfectly cooked pasta for a comforting meal.


Ingredients

Units Scale

Pasta:

  • 250g pasta, uncooked (around 8oz)

Cheesy Chicken:

  • 2 tbsps oil
  • 4 cloves garlic, minced
  • 275g chicken, cut into bite-sized pieces (around 9.6 oz)
  • 1/2 tsp salt (adjust to your taste)
  • 1/2 tsp black pepper
  • 1/2 tsp red chilli powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/4 tsp oregano
  • 2 tbsps tomato paste
  • 1 tsp chilli sauce/sriracha
  • 130ml milk (1/2 cup + 1 tbsp)
  • 110ml double cream (1/4 cup + 3 tbsps)
  • 100g mozzarella cheese + extra to sprinkle on top (1 cup + extra)
  • 100120ml pasta water (around 1/2 cup)

Instructions

  1. Boil Pasta: Add pasta to a pot with cold water, salt, and a bit of oil. Cook until al dente.
  2. Cook Garlic: Sauté minced garlic in oil until golden.
  3. Cook Chicken: Add chicken pieces, cook until white.
  4. Seasonings: Add salt, pepper, spices, and mix.
  5. Add Tomato Paste: Stir in sriracha and tomato paste.
  6. Making the Sauce: Gradually add milk and cream, cook until bubbling.
  7. Add Cheese: Mix in cheese until melted.
  8. Add Pasta Water: Gradually add pasta water, bring to a boil.
  9. Add Pasta: Mix in cooked pasta, top with cheese, cover, and cook until melted.
  10. Serve and enjoy!

Notes

  • Adjust salt to taste due to salt in pasta water and cheese.
  • Feel free to add more pasta water for desired consistency.
  • If you don’t have oregano, substitute with Italian seasoning or mixed herbs.
