Description

This creamy chicken stew is a comforting and satisfying dish perfect for chilly days. Tender pieces of chicken, hearty vegetables, and a velvety cream base come together to create a flavorful meal that the whole family will love.

Marinated Chicken:

  • 1 1/2 pounds Chicken Breast, cut into 1-inch pieces
  • 1 teaspoon Italian Seasoning, divided
  • 1 teaspoon salt, divided
  • 1 teaspoon Ground Black Pepper, divided
  • 1/2 teaspoon Paprika Powder

Stew:

  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Salted Butter
  • 2 Ribs Celery, sliced
  • 2 Large Carrots, peeled and sliced
  • 1 White Onion, diced
  • 3 Cloves Garlic, finely minced
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Sage
  • 1 teaspoon Dried Rosemary
  • 1 cup White Wine
  • 1 pound Potatoes, peeled and cut into 1-inch pieces
  • 6 cups Chicken broth, low sodium
  • 1 1/2 cups Heavy cream, divided
  • 1/3 cup All-Purpose Flour

Instructions

  1. Marinate the Chicken: In a large bowl, mix the chicken, 1/2 teaspoon Italian seasoning, paprika, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Let it marinate for 15-30 minutes.
  2. Cook the Chicken: Heat olive oil in a Dutch oven, add chicken and cook until done. Remove and set aside.
  3. Sauté Vegetables: Melt butter in the pot, cook celery, carrots, and onion until softened.
  4. Season and Deglaze: Add garlic, remaining salt and pepper. Deglaze with wine.
  5. Add Ingredients: Put in potatoes, chicken broth. Simmer until potatoes are tender.
  6. Finish the Stew: Stir in 1 cup of heavy cream. Mix flour with remaining cream, then add to stew. Boil until thickened.
  7. Serve: Once thickened, turn off heat. Serve with bread and thyme garnish.

  • STORING NOTES: This creamy chicken stew can be stored in an airtight container in the fridge for up to 4 days. Stir well before reheating to recombine any separated broth.
