Shallots:
- 2 small shallots, diced
Garlic:
- 4–5 cloves garlic, finely minced
Vegan Butter:
- 3 tablespoons vegan butter
Butter Beans:
- 30 ounces canned butter beans (2 cans with liquid)
Vegan Cream Cheese:
- 1/4 cup vegan cream cheese
Lemon Juice:
- 2 tablespoons lemon juice
Lemon Zest:
- 1/2 tablespoon lemon zest (zest of 1 lemon)
Spinach:
- 3 cups spinach
Salt & Pepper:
- Salt and pepper to taste (at least 1/2 teaspoon pepper)
Instructions
- Prep: Finely dice shallots and mince garlic.
- Saute: Melt vegan butter in a large pot over medium heat. Add shallots and garlic, saute for 3 minutes.
- Add Beans: Add canned butter beans with liquid. Simmer for 5 minutes.
- Flavor: Stir in vegan cream cheese, lemon juice, and zest. Simmer for 2 minutes.
- Finish: Remove from heat, stir in spinach until wilted. Season with salt & pepper.
- Serve: Enjoy warm with toasted bread.
I recommend using a garlic press for minced garlic.
Notes
- Serve with toasted sourdough or spelt bread.
- Best enjoyed fresh but can be stored in the fridge for 3-4 days or freezer for 1 month.
- Reheat in microwave or on stovetop until warmed through.
