This Creamy Parmesan Garlic Mushroom Chicken is a one-skillet dish that’s irresistibly flavorful and easy to prepare. The chicken is tender and juicy, cooked to perfection, accompanied by earthy mushrooms and spinach, all enveloped in a rich, creamy Parmesan garlic sauce. For the Chicken

  • 4 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 8 ounces sliced mushrooms

For the Creamy Parmesan Garlic Sauce

  • 1/4 cup butter
  • 2 garlic cloves, minced
  • 1 tablespoon flour
  • 1/2 cup chicken broth
  • 1 cup heavy cream or half and half
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 cup spinach, chopped

Instructions

  1. Sear the chicken
    In a large skillet over medium-high heat, add olive oil. Season the chicken breasts with salt and pepper on both sides. Cook each chicken breast for 3–5 minutes on each side until they are golden brown and cooked through (no longer pink in the center). Remove from the skillet and set aside on a plate.
  2. Cook the mushrooms
    Add the sliced mushrooms to the same skillet. Cook for a few minutes until the mushrooms are tender and slightly browned. Remove from the skillet and set aside.
  3. Prepare the sauce
    In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant and tender, about 1 minute. Whisk in the flour and cook for another minute to create a light roux.
  4. Build the creamy sauce
    Gradually whisk in the chicken broth, followed by heavy cream. Add the Parmesan cheese, garlic powder, salt, and pepper. Stir continuously to blend the flavors and prevent lumps. Bring the mixture to a gentle simmer.
  5. Add spinach
    Stir the chopped spinach into the sauce and let it simmer for a couple of minutes, allowing the spinach to wilt and the sauce to slightly thicken.
  6. Combine it all
    Add the seared chicken and cooked mushrooms back into the skillet, coating them in the cream sauce. Let the dish simmer for 2–3 minutes to heat everything through. Serve warm, optionally over pasta or rice.

Notes

  • Serve this dish over pasta, rice, or with crusty bread to soak up the delicious sauce.
  • To save time, you can use pre-sliced mushrooms and pre-washed spinach.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat to avoid separating the sauce.
