Chicken:
- 4 boneless, skinless chicken breasts (5-8 oz. each)
- Salt and pepper
- 3 tablespoons butter, divided
- 1 tablespoon olive oil
Sauce:
- 1 cup low sodium chicken broth
- 1/2 cup milk
- 1/4 cup sour cream
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1 (1 oz.) packet Ranch seasoning mix
Instructions
- Pound the chicken breasts: Use a meat mallet to pound the chicken breasts to an even 1” thickness. Season both sides with salt and pepper.
- Sear the chicken: In a skillet, melt 1 tablespoon of butter with olive oil. Sear the chicken on each side until golden brown. Set aside.
- Prepare the sauce: Reduce heat and add remaining butter. Stir in flour, then add chicken broth, milk, sour cream, and seasonings. Simmer until sauce thickens.
- Combine chicken and sauce: Return chicken to the pan, simmer until heated through and sauce has thickened.
- Serve: Plate the chicken, spoon sauce over it, and garnish with parsley.

- I used smaller boneless, skinless chicken breasts (5-8 oz. each) for this recipe.
- Use full-fat sour cream to prevent curdling.
