Description

Chicken:

  • 4 boneless, skinless chicken breasts (5-8 oz. each)
  • Salt and pepper
  • 3 tablespoons butter, divided
  • 1 tablespoon olive oil

Sauce:

  • 1 cup low sodium chicken broth
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1 (1 oz.) packet Ranch seasoning mix

Instructions

  1. Pound the chicken breasts: Use a meat mallet to pound the chicken breasts to an even 1” thickness. Season both sides with salt and pepper.
  2. Sear the chicken: In a skillet, melt 1 tablespoon of butter with olive oil. Sear the chicken on each side until golden brown. Set aside.
  3. Prepare the sauce: Reduce heat and add remaining butter. Stir in flour, then add chicken broth, milk, sour cream, and seasonings. Simmer until sauce thickens.
  4. Combine chicken and sauce: Return chicken to the pan, simmer until heated through and sauce has thickened.
  5. Serve: Plate the chicken, spoon sauce over it, and garnish with parsley.

  • I used smaller boneless, skinless chicken breasts (5-8 oz. each) for this recipe.
  • Use full-fat sour cream to prevent curdling.
