For the Chicken:
- 4 boneless, skinless chicken breasts (5-8 oz. each)
- Salt and pepper
- 3 tablespoons butter, divided
- 1 tablespoon olive oil
For the Sauce:
- 1 cup low sodium chicken broth
- 1/2 cup milk
- 1/4 cup sour cream
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1 (1 oz.) packet Ranch seasoning mix
To Garnish:
- Fresh parsley, to garnish (optional)
Instructions
- Pound the Chicken: Pound the chicken breasts to an even 1” thickness; season with salt and pepper.
- Sear the Chicken: In a skillet, sear the chicken in butter and olive oil until golden brown. Set aside.
- Prepare the Sauce: In the same skillet, make a roux with butter and flour. Add chicken broth, milk, sour cream, and seasonings. Simmer until thickened.
- Combine and Simmer: Return chicken to the skillet, coat with sauce, and simmer until heated through.
- Serve: Dish up the chicken, spoon sauce over, and garnish with parsley.
