Description

This Creamy Spinach Chicken Casserole is a quick and delicious baked dish featuring tender chicken breasts layered over fresh spinach, smothered in a rich, creamy sauce made with mayonnaise, sour cream, and parmesan cheese, and topped with melted Monterey Jack cheese. Perfect for an easy weeknight meal or a comforting family dinner, this casserole combines simple ingredients into a flavorful and satisfying dish.

Ingredients

Scale

Chicken and Vegetables

  • 1 lb chicken breasts (2 chicken breasts, cut in half crosswise)
  • 8 oz fresh spinach
  • 8 oz Monterey Jack cheese, shredded

Creamy Sauce

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup parmesan cheese, grated
  • 1/2 tsp ground black pepper
  • 1 tsp garlic salt

Instructions

  1. Preheat the Oven: Preheat your oven to 500°F. Lightly spray a 13 x 9-inch baking dish with cooking spray to prevent sticking, and set it aside.
  2. Make the Creamy Sauce: In a bowl, combine mayonnaise, sour cream, grated parmesan cheese, ground black pepper, and garlic salt. Mix thoroughly until the sauce is smooth and well combined.
  3. Assemble the Casserole: Spread the fresh spinach evenly in the prepared baking dish. Arrange the uncooked, halved chicken breasts evenly over the spinach layer.
  4. Add Creamy Sauce: Evenly spread the prepared creamy sauce mixture over the chicken breasts, ensuring each piece is well coated.
  5. Add Cheese and Bake: Sprinkle shredded Monterey Jack cheese evenly over the top of the sauced chicken. Place the dish on the bottom rack of the preheated oven and bake for 20-25 minutes, or until the spinach has shrunk and the chicken is cooked thoroughly (reaching an internal temperature of 165°F).

Notes

  • Use a baking dish safe for oven temperatures as high as 500°F, such as a heavy Dutch oven baking dish.
  • Ensure chicken is cooked through by checking its internal temperature with a meat thermometer if possible.
  • You can substitute Monterey Jack cheese with mozzarella or cheddar if desired.
  • For a lower fat version, consider using light mayonnaise and sour cream.
