For the Creamy Avocado Sauce:
- 1/2 medium Avocado
- 1/4 cup Sour Cream
- 1 tbsp. fresh Lemon or Lime Juice
- 1/4 cup (packed) Cilantro Leaves
- 1/2 tsp. Kosher Salt plus more to taste
- 2 tbsp. Water plus more as needed
For the Ground Turkey + Black Bean Filling:
- 2 tsp. Avocado Oil or Olive Oil
- 8 oz. Lean Ground Turkey
- 2 1/2 tsp. Homemade Taco Seasoning
- 1/3 cup chopped Onion (yellow or white)
- 3/4 cup canned Black Beans drained, not rinsed
- 4 oz. Green Chiles
- 2 tbsp. finely chopped Cilantro
Homemade Taco Seasoning:
- 1/2 tsp. Cumin
- 1/2 tsp. Mexican Oregano or Italian Oregano
- 1/2 tsp. Garlic Powder
- 1/2 tsp. Kosher Salt
- 1/4 tsp. Smoked Paprika
- 1/4 tsp. Chili Powder
- 1/8 tsp. Cayenne Pepper (optional)
For the Tacos:
- Cooking / Baking Spray or Avocado Oil, for brushing the tortillas
- 6 Fajita-Sized Flour Tortillas (6")
- 1 1/2 cups shredded Monterey Jack Cheese
Instructions
- Prepare the Avocado Sauce: In a blender or food processor, combine the avocado, sour cream, lime juice, cilantro, salt, and water. Blend until smooth, adding more water as needed to reach desired consistency. Adjust salt to taste.
- Make the Taco Filling: Heat the avocado oil in a skillet over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes. Add ground turkey and cook until browned, breaking it apart with a spoon. Stir in taco seasoning, black beans, green chiles, and cilantro. Cook for another 3-5 minutes until heated through. Remove from heat.
- Preheat the Oven: Preheat your oven to 375°F (190°C). Prepare a baking sheet with parchment paper or lightly spray with cooking spray.
- Assemble the Tacos: Brush both sides of each tortilla with avocado oil or spray with cooking spray. Arrange on the baking sheet and bake for about 5 minutes until crispy. Remove from oven, spoon the turkey and black bean mixture onto each tortilla, then sprinkle with shredded cheese.
- Bake: Return the assembled tacos to the oven and bake for an additional 8-10 minutes, until the cheese is melted and the tortillas are crispy.
- Serve: Drizzle the avocado sauce over the tacos and garnish with extra cilantro or lime wedges if desired. Serve immediately.
Notes
- For extra crunch, double bake the tortillas until extra crispy.
- You can substitute ground beef or chicken for turkey.
- If you prefer a spicier flavor, add more cayenne pepper or hot sauce to the filling.
- Leftover tacos can be stored in an airtight container in the refrigerator for up to 2 days and reheated in the oven or microwave.
