Potato Wedges:
- 4 medium russet potatoes, (1 1/2 to 2 lbs) scrubbed and rinsed
- 1/4 cup extra virgin olive oil
- 1/2 tsp fine sea salt, or kosher salt
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
Topping:
- 2 Tbsp parsley, finely chopped
- 1/4 cup parmesan cheese, grated
Instructions
- Preheat the oven: Preheat the oven to 450˚F and line a baking sheet with foil or parchment paper.
- Prepare potatoes: Cut potatoes into wedges, soak in ice water, drain, and pat dry.
- Season potatoes: In a mixing bowl, season potatoes with salt, paprika, pepper, and garlic powder. Toss with olive oil.
- Bake: Arrange potatoes on the baking sheet and bake at 450˚F, flipping halfway through, until crispy.
- Add topping: If desired, toss hot wedges with parmesan and parsley before serving.
