- 4 medium Zucchini (cut into 1/4-inch thick slices)
- 2 large Eggs (whisked)
- 2/3 cup Wholesome Yum Blanched Almond Flour
- 2/3 cup Grated parmesan cheese
- 1 tbsp Italian seasoning
- 1/2 tsp Paprika
- 1/2 tsp Garlic powder
- 3/4 tsp Sea salt
- 1/4 tsp Black pepper
For Frying
- 2 tbsp Avocado oil (plus more as needed)
Instructions
- Prepare the breading stations: Set up two bowls: one with the whisked eggs and the other with a mixture of almond flour, grated parmesan cheese, Italian seasoning, paprika, garlic powder, sea salt, and black pepper. Prepare a third bowl and place just enough of the flour mixture from the second bowl to cover the bottom of it in a thick layer.
- Bread the zucchini slices: Dip each zucchini slice in the egg mixture, shaking off any excess. Place the slice into the third bowl with the minimal flour mixture. Use a spoon to dust and fully coat the zucchini slice with more flour mixture from the second bowl. Lightly press, flip, and cover the other side. Use one hand for the egg mixture and the other for the dry mixture to prevent clumping. Continue breading all slices, replenishing the flour mixture as needed to avoid it becoming too wet/clumpy.
- Fry the zucchini: Heat 2 tablespoons (30 mL) of avocado oil in a pan over medium heat. Fry the zucchini slices in a single layer, ensuring they do not touch each other. Cover with a lid and cook for 2-3 minutes per side or until golden brown.
- Drain and repeat: When cooked, transfer the fried zucchini to a paper towel-lined plate to remove excess oil. Repeat the frying process with the remaining slices, adding more oil if necessary.

- Make sure to keep the breading mixture dry by replenishing it in small batches to avoid clumping.
- Do not overcrowd the pan while frying to ensure the zucchini slices cook evenly and get crispy.
